+Pets de Soeurs (aka Nun's Farts). Alternate name for polite company: "Pig's Tails".  Simple cookies to get rid of excess pie dough because you ate too much of it to make a pie.
+
+## Ingredients
+* Excess [pie dough](./pie-dough.md) (recipe is scaled for 1 pie's worth of dough, adjust as needed)
+* Butter (approximately 6 tbsp)
+* 1 cup brown sugar
+* 2 teaspoons cinnamon
+
+## Tools
+* Rolling pin
+* Cookie sheet
+* Parchment paper or non-stick spray

+## Steps
+1. Roll out dough into a square until it is approximately 1/4 inch thick
+1. Cover dough in even layer of butter, leaving one edge clear
+1. Spread brown sugar and cinnamon evenly over butter
+1. Roll up the dough, seal the seam with either water or milk
+1. Slice into 1/2 inch thick segments, place on cookie tray (place parchment paper or spray on the tray first)
+1. Bake at 350 F for 20 minutes (until sugar caramelizes)
