Combine @vegetable oil{1.5%Tbsp}, @ancho chile powder{1%Tbsp}, @paprika{1%Tbsp}, @ground coriander{1.5%tsp}, @dried oregano{1.5%tsp}, @salt{3/4%tsp}, @pepper{1/2%tsp}, @ground cinnamon{1/4%tsp}, @cayenne{1%pinch}, and @allspice{1%pinch} in #12-inch nonstick skillet{}. Cook over medium heat, stirring constantly, until mixture is bubbling and fragrant. Off heat, carefully stir in @cider vinegar{3%Tbsp}, @sugar{1.5%tsp}, and @garlic{1%clove} (mixture will sputter). Let stand until steam subsides and skillet cools slightly, about ~{5%minutes}.
