In a #large bowl{}, mix together cooked @brown rice{4%cups}, cooked @sweet potato{4%cups}, @black beans{1%15-oz can}, chopped @bell pepper{2%cups}, and @raw spinach or kale{6%cups}.
In a #blender{}, combine @fresh or frozen mango chunks{1.5%cups}, @flax seed meal{4%Tbsp}, @red wine vinegar{4%Tbsp}, @chopped shallot{1%Tbsp}, @Dijon mustard{1%tsp}, @salt{1%tsp}, @water{1/2%cup}, and @maple syrup{2%Tbsp}.
Puree until very smooth. Pour over rice and bean mixture. Combine well and serve.
