Lava cake receipe can make 6-7 single serving lava cakes depending on baking cup size

## Ingredients
|
||||
* 62.5g chocolate (90% or greater)
|
||||
* 62.5g butter (un-salted)
|
||||
* 2 eggs
|
||||
* 50g flour (all purpose)
|
||||
* 50g sugar
|
||||
|
||||
## Tools

||||
* mixing bowl
|
||||
* food scale
|
||||
* small pot
|
||||
* oven

* spatula

||||
* whisk

||||
* cupcake baking cups
|
||||

## Steps
|
||||
1. In a small pot melt chocolate and butter, use double boiler method to reduce risk of burning butter
|
||||
2. Whisk eggs and sugar in a mixing bowl, mix until eggs and sugar are fully integrated
|
||||
3. Mix the chocolate/butter (ganache) into the eggs/sugar
|
||||
4. Slowly add flour into the combined mixture, fold in the flour do not mix
|
||||
5. Evenly distribute mixture into 7-8 small cupcake baking cups
|
||||
6. Place cups into frdige for 1-2 hours
|
||||
7. Bake for 7-8min at 400F
|
||||

* 2oz kentucky bourbon (they all taste the same to me, maker's mark if you want somthing fancy)

* sugar cube or 1 table spoon brown sugar
|
||||
* 2 dash of angostura aromatic bitters
|
||||
* large orange or lemon peel
|
||||
* large ice cube or sphere
|
||||

* rocks glass

||||
* jigger

||||
* muddler

||||
* bar spoon (or any spoon)

||||

## Steps
|

1. add sugar and bitters to rock glass and mudler until it becomes a fine paste

2. add ice and bourbon to glass and stir

3. fold fruit peel over drink and rim

## Ingredients

* full rack of lamb
|
||||
* 10 leaves of fresh mint
|
||||
* 3 sprigs of fresh rosemary
|
||||
* 3 table spoon of dijon mustard
|
||||
* 1/2 cup of bread crumb (or panko)
|
||||
* 2 cloves of garlic
|
||||
* salt and pepper
|
||||
|
||||

* 1 oven safe fry-pan
|
||||
* oven
|
||||
* knife or food processor to cut herbs
|
||||
* food brush
|
||||
|
||||
## Steps
|
||||
1. use paper towel to pad dry rack of lamb
|
||||
2. season rack of lamb with salt and pepper
|
||||
3. sear the rack of lamb on all sides (1-2min per side) until brown, then set aside
|
||||
4. brush dijon mustard rack of lamb, make sure to cover thoroughly
|
||||
5. chop mint, rosemary and garlic and combine with bread crumb
|
||||
6. coat the rack of lamb with the herb and bread crumb
|
||||
7. pre-heat oven to 450 F
|
||||
8. bake for 10min, then reduce heat to 300 F bake for 5-10min (5min = medium rare, 10min = medium)
|
