Pork Belly Lollipops
|

||||
A sweet, smokey, and savory pork belly treat.
|
||||
|
||||
## Ingredients
|
||||
- 4lbs Pork Belly (Preferably from costco)
|
||||
- 1 Bottle Chik-fil-a Polynesian Sauce
|
||||
- Any sweet rub
|
||||
- 1/4-1/2 bottle red wine
|
||||
|
||||
## Tools
|
||||
- Knife
|
||||
- Smoker/Treager
|
||||
- Foil and Aluminum Pan
|
||||
- Skewers
|
||||
|
||||
## Steps
|
||||
1. Cut the costco pork belly in half and score along the fat cap
|
||||
1. Place pork belly pieces onto skewer and cover in rub, let sit in fridge for at least 30 min.
|
||||
1. Preheat smoker to 170-180, smoke pork belly until temp reaches 160 F
|
||||
1. Combine 3/4 bottle of polynesian sauce and 1/4 bottle of red wine in a small bowl
|
||||
5. Remove pork belly from smoker, increase heat to 275
|
||||
6. Place pork belly in aluminum pan and pour sauce/wine mixture over the pork belly. Cover pan in foil and place on smoker for 1-1.5 hours
|
||||
7. Remove pan and place pork belly back on smoker while basting remaining polynesian sauce (not mixture) onto pork belly and cook until glaze thickens and carmelizes
