🍲 Applied Homemade Vegetarian Gravy

🧂 Ingredients
- 🧈 1 stick unsalted butter
- 🧅 1 cup onion
- 🥬 0.5 cups celery
- 🥕 0.5 cup carrot
- 🧄 3 cloves garlic
- 🌾 0.75 cup all-purpose flour
- 🍲 6 cups vegetable broth
- 🧂 some salt
- 🧂 some pepper

📝 Instructions
Step 1
Heat a saute pan over medium heat.
Step 2
Add unsalted butter, minced onion, minced celery, minced carrot, and sliced garlic to the pan.
Step 3
Cook gently (sweat) for 2 minutes until the vegetables soften.
Step 4
Stir in the all-purpose flour and cook for an additional 4 minutes, or until the roux turns a light brown color.
Step 5
Gradually add the vegetable broth while stirring to avoid lumps.
Step 6
Simmer the gravy for 5 minutes, allowing it to thicken.
Step 7
Season with salt and pepper to taste.
Step 8
If desired, finish by stirring in about 1 Tbsp of your favorite combination of freshly chopped herbs.
Step 9
Storage: keeps well in the refrigerator for up to 5 days or can be frozen for 2-3 months.

Pro-tip: To make this gravy vegan, substitute the butter with oil or a plant-based butter alternative.
