🍋 Lemon Blueberry Bread

🧂 Ingredients
- 🥥 0.75 cups melted coconut oil
- 🍬 1 cup sugar
- 🥚 3 eggs
- 🍦 0.5 tsp vanilla
- 🍋 2 Tbsp lemon zest
- 🦠 1 cup yogurt
- 🍋 0.25 cup lemon juice
- 🌾 2 cups flour
- 💨 1 tsp baking powder
- 🥤 0.5 tsp baking soda
- 🧂 0.5 tsp salt
- 🌾 2 Tbsp flaxmeal
- 🫐 1 cup blueberries
- 🍋 2 tsp lemon juice
- 🍬 1 cup powdered sugar

- 1 loaf pan
- 1 parchment paper
- 1 bowl
📝 Instructions - Dough
Step 1
Preheat oven to 350°F. Line a loaf pan with parchment paper.
Step 2
Combine melted coconut oil, sugar, eggs, vanilla, lemon zest, yogurt, and 1/4 cup lemon juice.
Step 3
In a separate bowl, combine flour, baking powder, and baking soda. Add salt.
Step 4
Combine all ingredients and flaxmeal and fold in blueberries.
Step 5
Bake approximately 45 to 50 minutes.
📝 Instructions - Glaze
Step 6
For glaze, whisk together 2 tsp lemon juice and powdered sugar and drizzle over cooled cake.
